What you'll need

  • 400g ground almonds
  • 250g powdered sugar
  • 1 pinch of cinnamon
  • 2 egg whites
  • 1 packet of vanilla sugar
  • A bit of flour
  • Pastry brush
  • Baking tray and baking paper
  • Star cookie cutter
  • For the meringue layer:
  • 125g powdered sugar
  • 1 egg white
  • Bowl
  • Hand mixer

How it works

  1. Put 400g of ground almonds, 250g of powdered sugar, a teaspoon of cinnamon, and one packet of vanilla sugar into a bowl.

  2. Whip the two egg whites with the hand mixer until stiff and gently fold them into the dry ingredients. Knead everything into a smooth dough.

  3. Roll out the dough on a lightly floured surface to about 1cm thick. Use a star cookie cutter to cut out your cinnamon stars. Place the stars on a baking tray lined with baking paper.

  4. Prepare the meringue layer: Whip 1 egg white until stiff and gradually add 125g of powdered sugar. Stir until the mixture is shiny and creamy. Spread the mixture over the stars.

  5. Caution! The oven will get really hot! Ask an adult to help put the cinnamon stars in the oven and take them out. Preheat the oven to 120 degrees Celsius. Bake the cinnamon stars for about 20 minutes. The meringue layer should stay white and not get too dark.
